Festive Ham Glaze

Glazing a ham adds great colour and a wonderful finish to a joint or leg of ham. It lessens the saltiness, whilst adding a greater depth of flavour.

Preparation time: 15 minutes
Cooking time: 65 minutes
Serves: 12

¼ teaspoon allspice
¼ teaspoon cinnamon
6 tablespoons of quince or pear paste
3 tablespoons sherry vinegar
2 tablespoons orange juice

Preheat an oven to 160°C fan forced. Place all the glaze ingredients into a small saucepan and cook for a couple of minutes to thicken and dissolve the quince paste. Brush half the mixture over the ham and bake for 15 minutes. Brush on another layer and bake for another 15 minutes, then apply another layer of glaze. Keep baking the ham for at least another 30 minutes, basting regularly with the glaze until it is finished and the ham is golden and sticky.
