Festive Recipe

This stuffing has a wonderful festive look and can be cooked on its own or placed inside your Christmas chicken or turkey.

300g fresh whole grain breadcrumbs
1 tablespoon port or sherry
1 egg
2 shallots finely diced
2 tablespoons fresh thyme, finely chopped
1 tablespoon fresh parsley, finely chopped
1/2 cup dried cranberries
Salt and pepper
1/4 cup olive oil
