Mum deserves brekkie in bed this Mother’s Day. Give this traditional Turkish dish menemen from Koy Restaurant a whirl. It is a great breakfast treat and really easy to make.
10 medium tomatoes (cubed)
2 brown onions (cubed)
2 red capsicums (cubed)
1 tablespoon tomato paste
1 garlic clove (chopped)
100ml olive oil
Season with salt & pepper, ground tumeric and chilli flakes
Add all ingredients into a large pot on medium heat and cook until ingredients are soft. This is the menemen mixture.
Add 150gm of the menemen mixture and 3 eggs to pan, fold eggs through mixture roughly until eggs are cooked but soft.
