- 2 1/4 cup self-raising flour, sifted
- 3/4 cup white sugar
- 1 teaspoon vanilla essence or extract
- 80 grams butter, melted
- 1 cup milk
- 2 eggs, beaten lightly
- 1 cup sliced bananas, berries or other soft fruit
Preheat oven to 180°C. Grease a 12-hole standard muffin pan.
Combine flour and sugar in a bowl. Then combine wet ingredients in a jug (vanilla, butter, milk and eggs). Gently combine wet and dry ingredients. Carefully fold through fruit.
Do not over mix muffins, fold just to combine otherwise they may not be as soft.
Divide mixture among holes of prepared pans. Top muffins with a few slices of banana (optional).
Bake muffins in preheated oven for about 35 minutes. Remove from oven and leave for a few minutes before placing on a wire rack to cool.
