grilled corn

Mexican Grilled Corn

From The Neff Market Kitchen Cooking School.

  • 2 tbsp mayonnaise
  • juice of 1 lime
  • 1/2 cup grated romano cheese*
  • 2 ears fresh corn
  • 1 tsp chili powder

Preheat grill or grill pan.

Combine mayonnaise and lime juice in a small bowl. It should still be quite thick, if it’s too thin the mayonnaise will drip off the corn.

Grill corn, turning a few times, until just charred, about 5 minutes.

Remove corn from grill, cool 2 minutes and brush with mayo-lime sauce until well coated.

Sprinkle the corn with cheese and chili.

* Traditionally cojita cheese is used in street corn. But it is very difficult to buy in Australia. A good substitute is romano cheese or a dry aged fetta.
