Glazed Christmas Ham

Serves 6-8
Ingredients
Small to Medium Ham from the butcher - Gluten Free
1-2 tins of sliced pineapple
1-2 cups of glazed cherries
For the Glaze
1/2 cup brown sugar
1/3 cup maple syrup
1/3 cup honey
1 tsp Dijon mustard
Directions
- Take the skin off the ham - but make sure you leave about 2cms of the fat (this keeps the ham moist). Score the fat in a diamond pattern approx. 5mm deep.
- To Make the Glaze, stir the sugar, maple syrup, honey, and mustard in a bowl until the sugar dissolves.
- Preheat the oven to 160 C, place a shelf as low as possible in the oven and remove the rest of the shelves.
- Line a large baking dish with 2 layers of non-stick baking paper.
- Brush 1/3 of the glaze over the ham.
- Arrange the pineapple and cherries as per the photo and secure them with toothpicks.
- Bake, brushing with glaze every 25 minutes, for 1 hour 30 minutes.
- Serve warm or cold and keep in a damp cloth in the fridge.
