Karaage - Japanese Fried Chicken
Ingredients
- 1kg Maryland debone and cut into bite-size
- 30ml ginger juice
- 30ml sake
- 30ml Kikkoman
- 20ml sesame oil
- A touch of salt
Mix well and marinate for 30 mins, then add:
- All-purpose flour (protect from over-cooking)
- Potato starch (make the chicken crispy up)
- Touch the marinated chicken with all-purpose flour first to protect it from overcooking
- Then touch the potato starch to make the chicken crispy.
Method
- Fry twice
- The first-time fry at 160 degrees to cook the chicken
- Take them out when it turns yellow
- The second time, fry at 180 degrees to make it crispy
- This time fry it for only 30 to 40 seconds.
