This recipe for menemen, a traditional Turkish scrambled egg dish, is from Koy Restaurant. It is a great breakfast treat or works for a light dinner too, and is really easy to make. This amount will serve 3-4 people.
- 10 medium tomatoes (cubed)
- 2 brown onions (cubed)
- 2 red capsicums (cubed)
- 1 tbsp tomato paste
- 1 garlic clove (chopped)
- 100ml olive oil
- salt & pepper, ground turmeric and chilli flakes to season
- 3 eggs
Add all ingredients into a large pan on medium heat and cook until soft. This is the menemen mixture.
Add 3 eggs to pan, fold eggs through mixture roughly until eggs are cooked but soft.
Enjoy with Turkish bread or a crusty loaf.
