Mexican Grilled Corn
Ingredients
- 2 tbsp mayonnaise
- juice of 1 lime
- 1/2 cup grated romano cheese*
- 2 ears fresh corn
- 1 tsp chilli powder
Method
Preheat grill or grill pan.
Combine mayonnaise and lime juice in a small bowl. It should still be quite thick, if it’s too thin the mayonnaise will drip off the corn.
Grill corn, turning a few times, until just charred, about 5 minutes.
Remove corn from grill, cool 2 minutes and brush with mayo-lime sauce until well coated.
Sprinkle the corn with cheese and chilli.
* Traditionally cojita cheese is used in street corn. But it is very difficult to buy in Australia. A good substitute is romano cheese or a dry-aged fetta.
