How to incorporate Summer fruit into your cooking

The time is now! Get creative with your cooking by introducing summer fruit into your meals.

Summer fruit is in its prime! And while we love popping an apricot into our lunchbox or snacking on a nectarine, there is so many ways to add these bright and cheerful fruits into our everyday cooking during the hotter months.

Mangoes

Prawns and mangoes are best friends! Try tossing cooked prawns with diced mango, avocado, butter lettuce and a simple lemon dressing. Amp up the flavour with a scattering of red chilli and fresh herbs.

A mango salsa is a versatile and a great way to add freshness to many dishes. Dice mango, red onion and coriander and season well with lime juice and salt. Dollop some over a hot curry, serve alongside BBQ chicken or as a finishing touch to fish tacos.

Nectarines

Sweet and zesty nectarines are the perfect addition to many savoury dishes. Try placing nectarines on a platter, drizzle with good extra virgin olive oil, salt and pepper. Top with rocket and a ball of burrata for a simple yet moreish side salad.

If you’re known to pickle vegetables try pickling nectarines! They pair perfectly with savoury market finds such as duck liver parfait or pork terrine.

Apricots

We’ve all heard of the naff chicken and apricot combo from the ‘70s… But there is certainly a reason why the duo was so popular! Take a modern take on it and grill chicken thighs on the BBQ along with halved apricots. Use this as a base for substantial salad or layer onto grilled flatbread and top with feta and green olives.

Peaches

Peaches and tomatoes may seem like an unusual pairing but we suggest you try this duo together! Dress them in a spicy Asian dressing such as nam jim and pair with baked or grilled fish, crispy shallots, peanuts and plenty of coriander.

Figs

Create beautiful summer bruschetta on the BBQ by grilling figs alongside crusty bread. Smear the toasted bread with goats cheese, top with the grilled figs, prosciutto and drizzle with honey and sprinkle with baby thyme.
