Fluffy Pancakes

From The Neff Market Kitchen Cooking School.


  • 2 cup self-raising flour, sifted
  • 2 tablespoons white sugar
  • 1/2 teaspoon salt
  • 1 egg, beaten lightly
  • 2 tablespoon melted butter
  • 1 1/4 cup milk
  • 1 tablespoon butter, extra


Combine dry ingredients in a large bowl, make a well in the centre and whisk in egg, butter and milk. Do not overmix batter as it will become tough.
Heat a frypan over medium heat and melt a little butter. Pour 1/4 cup of the batter into pan. Cook for a couple of minutes until bubbles appear on the surface. Turn over and cook one minute more.
Cover to keep warm while you cook remaining batter.

Serve with icecream, honey or maple syrup. Or make these great Easter pancakes!
