SMM Poultry's "Infamous" Chicken Stock
We caught up with Olivia from South Melbourne Poultry who shared her recipe for their famous chicken stock.
Chicken stock is a very good idea because it gives you the warm and fuzzies and makes a house smell amazing and homely.
We recommend my infamous stock mix:
Chicken stock
Serves: makes 2-3 litres
Ingredients
- 1 bag of chicken necks
- 2 chicken Marylands
- 6 chicken wings
- 2 tsp salt
Method
1. The trick is to brown the necks and wings in the bottom of a large stock pot first.
2. Then add your Marylands and fill the pot to the top with water.
3. Bring to the boil and then simmer for an hour.
4. After this remove all chicken pieces and then simmer for another hour.
The wings make the stock very gelatinous because of its two joints. And the Marylands provide succulent meat for shredding into the soup or just eating as is.
It is a time-consuming exercise so for those hard pressed for time, we have some made in the shop ready to go.
