Watermelon, Cucumber and Feta Salad

Ingredients
Serves 5-6
- 1/4 watermelon - cubed
- 2 Lebanese cucumbers - sliced or cubed
- 1/4 red onion - finely sliced
- Fresh mint to taste - finely sliced
- Feta to taste - crumbled
- Olive oil to taste
- Cracked pepper to taste
- 2tbsp balsamic vinegar
- 2tbsp water
Method
1. Slice red onion and in a small bowl add balsamic vinegar and water for pickling. Add red onion and soak for 30 mins.
2. Cut up watermelon and Lebanese cucumber in cubes. Slice fresh mint.
3. Drain red onion and add all ingredients into a large bowl and toss to serve.
Tip: If you have extra quick pickled red onions, save them for sandwiches, other salads or a side with eggs and avocado on toast!
